
INGREDIENTS FOR ONE RECTANGULAR BAKING FORM:
- 4 bananas (best if they are very ripe)
- 3 eggs
- 200 g spelt flour
- 60 gr dates
- 50 gr black chocolate
- 75 gr mixed nuts (I took walnut, almond - and hazel nuts )
- 25 gr pure cacao powder
- 3/4 teaspoon vanilla aroma
- 2 teaspoons baking powder
- super little lump of butter (melted)
- pinch of salt
Optional:
- 1 teaspoon spices for cookies & spiced biscuit
- chia seeds
INSTRUCTIONS:
1. Preheat the oven to 175 ° C.
Mix the bananas and dates (without pits!) with a hand blender until smooth.
Add the eggs and stir them into the batter.
2. Mix the spelt flour and the baking powder into the banana mixture. Add a pinch of salt and the vanilla aroma.
3. Chop the nuts and dark chocolate into pieces and mingle into the batter.
(If you want you can now also add the Chia seeds and cookie spices.)
4. Grease the baking mold with the melted butter and pour the batter into it.
5. Bake the banana bread in a preheated oven for about 45 minutes. (Depending on the size of your cake form)
Put a knife into the center of the cake, when it comes out clean and dry, it's ready.
If you prefer a more 'moelleux' effect, you can remove the bread sooner out of the oven.
6. Let it cool down or eat when it's still a bit heated.. 🤷♀️
