INGREDIENTS FOR ONE RECTANGULAR BAKING FORM:
- 3 bananas (best if they are very ripe)
- 1,5 pear
- 2 eggs
- 200 g whole grain flour
- 5 small pieces speculoos cookies
- 1 teaspoon spices for cookies & spiced biscuit
or just cinnamon (or both)
- 1/2 little bottle butter-vanilla aroma (Dr. Oetker)
- 2 teaspoons baking powder
- Little lump of butter (melted)
- pinch of salt
Optional:
- Chia seeds

INSTRUCTIONS:
1. Preheat the oven to 175 ° C. Mash the ripe bananas with a fork until completely smooth.
Add the eggs and stir them into the batter.
2. Slice the pear into pieces, blend them together with the flour into the banana mixture.
3. Crumble the cookies and add this together with the baking powder, spices, vanilla aroma and a pinch of salt.
(If you want this, now it's the time to add the Chia seeds as well)
4. Grease the baking mold with the melted butter and pour the batter into it.
5. Bake the banana bread in a preheated oven for about 45 minutes. (Depending on the size of your cake form)
I wanted this one to have a more 'moelleux' / 'bread pudding' texture.
So if you want a real firm 'bread texture', you need to put it in the oven for longer (I think about 65min).
Put a knife into the center of the cake to check if it comes out clean and dry.
6. Let it cool down or eat when it's still a bit hot..
Haven't personally tried this, but I believe a scoop of vanilla ice cream would match very well with this 😋
