Tartare of Herring (maatjes) with ginger and green apple

Ingredients for 2 persons:

 

- 3 Herring 'maatjes'

- 1/2 green apple (Granny Smith)

- slice of ginger + 1/2 coffee spoon ginger powder

- fresh coriander + parsley

- 1/2 lemon 

- 1/4 onion

- 1 coffee spoon fennel seeds (crushed) 

- piece of cucumber

- 1 table spoon olive oil

- P&S

( Skyr yoghurt if you want a fresh touch)

 

Instructions: 

1. Cut the apple, cucumber and Herring in cubes of about 1 cm. 

2. Finely chop the pieces of ginger, onion, coriander and parsley.

I took about 8-10 leaves coriander and +- 5 leaves parsley. Quantity depends on how you like the taste of these herbs.

You can also add chives, but this tends to give me digest issues..

Same problem with raw onion, that's why I've used less onion then suggested above. 

3. Mix alle these ingredients together with the olive oil in a bowl. Add zest of  lemon + squeeze the juice in the bowl. 

4. Add pepper, little bit of salt, ginger powder and the crushed fennel seeds.

I've also added a pinch of chili powder. 

5. Leave in the fridge for minimum 1 hour.

I've combined the tartare with green beens, avocado, lettuce and some roasted bread. 

I've also added a coffee spoon of Skyr yoghurt to give the tartare some extra fresh- and sourness.
