
INGREDIENTS FOR ONE RECTANGULAR BAKING FORM:
- 3 bananas
- 3 eggs
- 200 g flour
- 6 tablespoons agave nectar (agave siroop)
- 1/2 bag baking powder
- 50 g almond powder
- 1 tablespoon chia seeds
- half teaspoon vanilla aroma
- 150 g blueberries
- bake-proof chocolate rods (basically chocolate that doesn't melt)
- mixed nuts (I took walnut, almond - and hazel nuts )
- 125 g butter
- 2 tablespoons lemon juice
- pinch of salt
INSTRUCTIONS:
1. Grease a cake form with butter and sprinkle with a little almond powder. Set aside.
Preheat the oven to 180 ° C.
2. Split the eggs.
3. Melt the butter and whip up with the agave nectar to a foamy mass.
4. Whip the egg whites up with a pinch of salt until snow.
5. Break the yolks (dooiers) one by one through the butter-agave nectar mixture and whip up until foamy.
6. Mix the flour with the baking powder and the almond powder. Sift this over the bowl with the butter-agave mixture. Mix well, until smooth.
7. Peel the bananas and mash them with the lemon juice. Stir through the batter.
8. Carefully spoon the beaten egg whites into the batter.
9. Cut the nuts (I took a hand full) into pieces and mix with the batter. Add the Chia seeds as well.
Run your finger through this yumminess, I personally love the taste of batter ;-)
10. Divide the batter into two bowls.
11. For the chocolate banana bread:
Cut the chocolate rods into pieces of approximately 1cm. Mix these pieces with the batter and pour this into the bake form. I've placed the form a bit oblique, so that it's stays on one side of the form. So that the two batters don't get mixed up in the form.
12. For the fruity banana bread:
Add the blueberries and the vanilla aroma to the other bowl with batter. Pour this into the bake form as well.
13. Smooth the surface and put into the oven. Let it bake for 40 minutes. If it's still a bit liquid on the top, bake for 5 minutes more.
14. Let it cool down.
15. Enjoy!
LITTLE EXTRA FOR THE CHOCOLATE BANANA BREAD:
Make some healthy caramel to cover your banana bread piece.
(I mixed this caramel into my chocolade banana bread batter, but the caramel flavor didn't really came trough.. So I think it's better to add it on top of your piece.)
Ingredients:
- 120ml (Alpro) almond milk
- 10 dates
- a pinch of salt.
Just mix together in a blender :-)
