
INGREDIENTS FOR +- 6 PIECES:
- 150 g smoked salmon
- 70 g sour cream
- 2 tablespoons low - fat yoghurt
- 1 lemon
- 1 teaspoon crushed fennel seed
- snif fish herbs
- 1 teaspoon grated horseradish (mierikswortel)
- cucumber (a piece of approximately 8cm)
- 1/2 avocado
- sucrine salad
- pepper & salt
INSTRUCTIONS:
1. Cut the salmon into thin strips. Cut the cucumber and avocado into little cubes and keep separate from the salmon.
2. Mix the salmon with the sour cream, yoghurt and horseradish. Spice with peper, salt, fish herbs and the crushed fennel seed.
3. Grate the lemon above this mixture, how many is up to you. As this is personal, according to your own taste.... I personally love lemon zest, so I'd use too much for some people :-)
4. Fill the salad leaves with the salmon mixture. Finish with the cucumber and avocado cubes on top. I've also added some salmon stripes on top to give this some color.
